Namaskar. Welcome to nishamadhulika.com Today we will make kachoris, but in an appam maker, with very less oil. These will be as delicious as the ones fried in oil. Let’s start making these, To make kachoris, let’s firstly prepare dough, we have 1 cup refined flour, add 2 tbsp oil to it. Add 1/4 tsp salt, less than 1/4 tsp carom seeds, crush and add these. Add 1/2 tsp baking powder, Mix all ingredients well. Add water in small portions and make soft dough. Prepare dough same as those of the fried kachoris. Soft dough is ready do not squash it too much. Just bind it. A little more than 1/4 cup water is used to knead the dough, this was full 1/2 cup water. Cover and keep the dough for 10 minutes to set. Till then let’s prepare stufffing for the kachori. Add 1 tsp oil, 1/2 tsp ginger paste, 2 finely chopped green chili. Slightly roast these. Instead of paste you can also add 1/2 inch ginger piece grated. Add 2 tbs green peas, slightly roast these. Cover and cook for 2 minutes. keep flame low. Take 3 boiled potatoes , mash them well. 2 minutes have passed , peas are roasted well. Add mashed potatoes to it. Add 1/2 tsp fennel seeds powder, Add 1/2 tsp coriander powder. Add 1/4 tsp mango powder, Add 1/4 tsp red chili powder, if you want it more spicy add more of chili powder. Add 1/4 tsp garam masala, Mix all, mash potatoes and cook all for 2 minutes. Add less than 1/2 tsp salt. Add green coriander, mix all ingredients. Stuffing is ready, take it out in plate , keep to cool. 10 minutes have passed, dough is ready. Divide the dough into small parts. 7 dough balls are ready. To fill kachoris , lift a dough ball, expand it with hands. Add 2 tsp stuffing. Even if you add more stuffing the kachoris won’t break. even if it breaks oil will not be spoild as we are not using any. close the stuffing like this make it round. We have made potato peas stuffing for kachori, these can also be made from peas or moong dal stuffing. Kachoris are stuffed and ready, let’s roast them. Heat the appam maker to make kachoris, Keep flame to minimum, put some oil in the moulds. Place the kachoris to roast. Put some 2 to 3 drops of oil on top of it too. Cover it, keep flame minimum and check after 3 minutes. 3 minutes have passed flip and check it. They have turned slightly brown, flip them. Flip the kachoris, pour some oil as they seem dry. Cover and cook for another 3 minutes, cook likewise and flip at interval of every 3 minutes. Roast the kachoris, until golden brown. Check the kachoris. Kachoris have turned brown flip them. Kachoris should be nice and brown. Flip sides and roast wherever required. Cook for 2 minutes in open. Slightly increase the flame. Kachoris are roasted and ready, Turn off flame,keep it aside. It takes 20 minutes to roast the kachoris. Steaming Hot kachoris are ready to be served. These are really crispy and tasty. You can serve it with green coriander chutney,tomato sauce Serve with any of your favorite chutney. We have used very less oil in making the kachoris. Those who eat less oil can eat it. You can keep this kachori in fridge for 3 days and eat it. if for kids, take out the kachoris, roast again in appam maker for 3 to 4 minutes.
