Welcome to nishamadhulika.com Today we will make Layered Green Peas Khasta Kachori which is more appealing than the plain khasta green peas kachori and is very delicious to eat. To make Layered Green Peas Khasta Kachori first of all knead the refined flour. We have taken 2 cups refined flour in a big bowl, Add 2 tsp ghee to it, 1/2 tsp salt, Mix it. Add water in little little quantity of water to knead soft dough. Soft dough ready now and the dough is slightly stiff than the dough for the paratha . Dough is soft. We have used more than ½ cup of water. Cover the dough for 15 to 20 minutes for it to set. Once the dough is set, we will then make the kachoris. Till the dough sets, we will prepare stuffing from the green peas. For stuffing, Put a pan on flame to heat, put 2 tbsp oil into it. Let the oil heat up. Add a pinch of Asafoetida, ½ tsp cumin seeds powder, if you don’t have cumin seeds powder you can take coarsely grinded cumin seeds. 1/4 tsp turmeric powder. Reduce the flame so that the spices don’t burn. Add 2 to 3 finely chopped green chilies, 1 tsp ginger paste, 1 tsp coriander powder, 1 tsp fennel seeds powder, roast the spices. Now add green peas. We have taken 1.5 cup of frozen green peas. You can also take fresh green peas. We have preserved these green peas at home, you can see that in my video. Sauté the green peas well with the spices. Add 1/ 2 tsp of dry mango powder, 1/4 tsp red chili powder, 1/4 tsp garam masala and 1/2 tsp salt or to taste. Saute the green peas well with the spices. Cover the green peas for 2 to 3 minutes, reduce the flame and cook it till soft. Press and check the peas. Green peas are soft now. Mash the green peas with the spatula like this. We have not put grinded green peas in this kachori. Green peas which is mashed liked this tastes much better. Saute it a bit more. We have mashed and sautéed the green peas and the stuffing is ready now. Turn off the flame. Take out the stuffing in a plate. Stuffing is ready and 20 minutes are over, the dough is also set. Smoothen the dough. Dough is smooth, now break dough balls from it. Break the dough in two parts like this. And make small dough balls. Kachori’s can be made big or small as desdired. Dough balls are ready. Roll and flatten the dough balls like this. We had taken 4 tsp ghee, we used 2 tsp ghee mixed with the dough. We have 3 tbsp ghee now. Add 4 tsp refined flour to the ghee and mix it well till the flour is mixed with the ghee. Ghee and refined flour mix is ready. Now we will roll out the dough balls for making the kachoris. Firstly we prepare sheets for the Kachoris. Take a dough ball, dust it will refined flour and roll it thin and round. Put the refined flour in a big plate to dust the pooris. When it starts to stick to the rolling pin dust it with the refined flour. Roll it out very thin like a chapati. Thin sheets are rolled out and ready. Spread ghee and refined flour mix and over the sheet and spread it over the edges. Spread a thin layer like this over the sheet. Now fold the sheet giving three layers. One like this and the other like this. Spread a thin layer of this mixture over this. Fold again giving three layers. Fold the sheet into square shape like this. Similarly prepare square shaped sheet from the remaining dough balls as well to get a layered kachori. So, let us prepare square shaped sheets first. We are done with preparing the square shaped sheets. Keep them aside for 15 to 20 and then prepare the kachoris later. 10 minutes are done; let us start with rolling out the sheets. Place one square shaped sheet on the rolling board and roll out in square shape keeping it little thick. We are done with rolling out the sheet in square shape, now place 2 to 3 tsp stuffing over it. Lift both the edges and join them like this. Lift the other two corners as well and join the edges like this. Similarly, lift this corner as well and join here, sticking the edges. Here, we have joined all the corners. Now, again lift the two edges and join them like this. Lift the other two corners as well and join them in the center like this. Turn it like this and flatten pressing it downwards. We are done with stuffing the kachori. Similarly, stuff rest off the kachoris as well. Don’t keep it too thin in the center. Keep it thin on the corners and thick in the center. Roll out from the edges. Meanwhile heat enough oil in a wok on low flame. We are done with stuffing the kachoris. Drop a small dough lump in the oil. The dough lump starts floating on the surface steadily. We need slightly heated oil for frying the kachoris and fry them on the low flame. Keep the flame low and gently slide the kachoris in oil. Fry the kachoris on low flame until they turn golden brown in color from both the sides. Flip the sides when the kachoris start floating on the surface. Kachoris have turned golden brown in color from all side, drain them out. Hold the ladle on the side of the wok so that extra oil drains back in to the oil. Place the fried kachori on a plate. Similarly fry rest of the kachoris as well. We are done with frying all the kachoris, drain them out as well. Turn off the flame. With this much dough we have prepared 10 kachoris. It takes 15 minutes to fry kachoris at once. We need to fry the kachoris on low flame. Super delicious and crusty layered green pea’s kachoris are ready. Serve these tantalizing kachoris with green coriander chutney, tomato sauce or any other chutney or dip as per your desire. Making these kachoris is very easy just keep note of little things. While stuffing the kachoris, make sure you close the edges well to seal the stuffing. Make sure that the oil is heated slightly and the flame is kept low while frying.
